Irresistible Kentucky Bourbon Balls

Ingredients:

  • 1 cup finely crushed vanilla wafers
  • 1 cup chopped pecans
  • 1 cup confectioners’ sugar, divided
  • 2 tablespoons unsweetened cocoa powder
  • 2 1/2 tablespoons corn syrup
  • 1/4 cup bourbon

For coating:

  • 1 cup confectioners’ sugar
  • 1 tablespoon unsweetened cocoa powder

Directions:

  1. In a large bowl, combine crushed vanilla wafers, chopped pecans, 1/2 cup confectioners’ sugar, and cocoa powder. Stir in corn syrup and bourbon until mixture comes together.
  2. Shape mixture into 1-inch balls and place on a baking sheet lined with parchment paper. Refrigerate for at least 1 hour.
  3. In a small bowl, mix remaining 1/2 cup confectioners’ sugar and cocoa powder. Roll chilled balls in the sugar mixture until evenly coated.
  4. Store bourbon balls in an airtight container in the refrigerator for up to 2 weeks.
