Irresistible Kentucky Bourbon Balls
Ingredients:
- 1 cup finely crushed vanilla wafers
- 1 cup chopped pecans
- 1 cup confectioners’ sugar, divided
- 2 tablespoons unsweetened cocoa powder
- 2 1/2 tablespoons corn syrup
- 1/4 cup bourbon
For coating:
- 1 cup confectioners’ sugar
- 1 tablespoon unsweetened cocoa powder
Directions:
- In a large bowl, combine crushed vanilla wafers, chopped pecans, 1/2 cup confectioners’ sugar, and cocoa powder. Stir in corn syrup and bourbon until mixture comes together.
- Shape mixture into 1-inch balls and place on a baking sheet lined with parchment paper. Refrigerate for at least 1 hour.
- In a small bowl, mix remaining 1/2 cup confectioners’ sugar and cocoa powder. Roll chilled balls in the sugar mixture until evenly coated.
- Store bourbon balls in an airtight container in the refrigerator for up to 2 weeks.
